      In the Kitchen with Sandra: Cupcake Surprise

      With the holidays just around the corner, we find ourselves pressed for time. With work, school, last minute shopping, meal preparations, party invitations, etc., this doesn’t us leave much time for additional activities. So when my daughter asked me to bake something with her, I needed something that was on hand in my cupboard. At the same time I wanted to make it fun in the short amount of time we had available to bake. Here is a quick and easy festive cupcake recipe that you and your children will enjoy making together. The addition of the surprise inside will make this dessert a favorite all year long.

      Holiday Cupcake Surprise

      1 package chocolate cake mix (to make 24 cupcakes)
      1 to 2 containers readymade cream cheese frosting
      ¼ cup red sprinkles
      Christmas decorations for cupcakes
      24 pieces good quality chocolates*

      Preheat your oven to 350°F. Line your cupcake trays with Christmas paper cups. Make the batter following the instructions on the cake package and fill the cupcake trays about 2/3 of the way. Place one chocolate in the middle of each cupcake. Bake according to the package directions. Let cool and pipe the frosting and add decorations.

      Another way to enjoy these cupcakes is as a hot dessert. Place 2 chocolates per cupcake when filling them. Bake according to the package. Let them cool for about ten minutes. Plate them and serve with vanilla ice cream. The chocolates inside will serve as a filling for the cupcakes and your guests will be amazed how delicious they taste.

      Don’t forget to tell everyone there is a surprise in each cupcake!
