      In the kitchen with Sandra – Happy Mother’s Day

      In honor of my mother this Mother’s Day, I created a delicious salmon appetizer I know she will love. Salmon is her favorite fish. For those of you cooking for your moms this weekend, this appetizer is an easy addition to your buffet table. It literally took less than 15 minutes to put together, leaving you lots of time to spend with mom! Happy Mother’s Day!

      Mother’s Day Salmon Appetizer

      INGREDIENTS
      1 213g can of wild pacific sockeye salmon
      2 tbsp cream cheese
      1 small carrot, peeled and grated
      1 green onion, finely chopped
      Salt to taste
      1 tbsp finely chopped fresh chives
      Freshly ground pepper to taste
      1 package of 12 mini pastry shells

      Start by placing the salmon in a bowl with the cream cheese and mix together well. Add the salt to taste, as well as the green onion and the grated carrot. Divide this mixture between the 12 pastry shells and place on a platter. Sprinkle the chives and pepper. Refrigerate until you are ready to serve. Try to prepare this appetizer as close as possible to serving time since the pastry will absorb too much humidity if kept in the refrigerator too long.
