      In the kitchen with Sandra – For Dad

      In honor of Father’s Day, I dedicate this recipe to my dad. It’s the least I can do for such a wonderful man!  He recently retired from working and is now enjoying a new type of responsibility – grandchildren! He is now a babysitter, chauffeur, entertainer and everything else that comes with caring for grandchildren. And boy do the kids love their Nonno!

      In honor of his new line of “work” and to thank him, this coming Sunday I am making his favorite cookies. They are a spinoff of everyone’s favorite Italian lemon cookies, with an addition of orange and lime to give them a surprisingly refreshing citrus taste.

      Italian Citrus Cookies

      1 cup butter, softened
      1 ½ cups sugar
      4 eggs
      Zest of 1 lemon, 1 lime and 1 orange
      Juice of 1 lemon, 1 lime, 1 orange (reserve 3 tbsp for the icing)
      3 ½ cups of A/P sifted flour
      3 tsp baking powder
      1 cup icing sugar

      Preheat oven to 300F. Line a baking sheet with parchment paper and set aside. In a mixing bowl using the paddle attachment, cream your butter and sugar. Next add one egg at a time and mix well. Add the zests and juice. Lastly add the flour and baking powder a little at a time until well blended.

      Using a portion scoop, place the batter on the baking sheet leaving at least a two-inch space between each cookie. Bake for about 10 minutes, or until the cookie begins to crackle and is still pale in color.

      While the cookies are cooling begin making your icing. Place the sifted icing sugar in a small bowl and add 3 tbsp of citrus juice. Mix well together. Dip the tops of the cooled cookies in this mixture and let the icing harden for several hours. This recipe makes about 30 cookies using a one-ounce portion scoop. Enjoy!
