      In the Kitchen with Sandra: Hello Summer!

      Winter clothes packed away. Air Conditioner set to go. Pool soon to be in use. Now just need to work on my summer drinks… I found a great cocktail that moms, dads and kids can enjoy. This drink requires a little preparation that can last all summer long. You can prepare your fruit in advance and then freeze them in large quantities.

      Just imagine a hot summer day, sunbathing in the backyard or floating in the pool, and in need of a cool refreshment… need I say more?

      Hello Summer Cocktail

      INGREDIENTS
      1 cup strawberries
      1 cup pineapple chunks
      1 cup papaya chunks
      1 cup apple chunks
      2 cup water
      1/4 cup sweetener like sugar or honey
      For moms and dads only 1oz vodka or rum

      Start by preparing your fruit. Cut the larger fruit in chunks and place on a baking sheet in the freezer overnight. Place the frozen fruit in a blender and puree until smooth. Add water as you are pureeing until there are no more chunks. Please note that all 2 cups of water may not be needed.

      At this point taste the puree and adjust the sweetness using sugar or honey. Pour into a glass with a straw for the children. At this point you may add the desired alcohol for moms and dads to enjoy! You may take advantage of specials at the grocery store and prepare in advance large quantities of fruit in your freezer. Or you may also purchase ready frozen fruit. Try using different combinations of fruit to keep the children coming back for more.
