      In the Kitchen with Sandra: Easy Pudding Pie

      Now that the beautiful hot temperature is here, and we are relaxing by the poolside, we are definitely not thinking about cooking over a hot stove! It’s time to trade in those “hot and fresh” from the oven recipes to a “quick and cooler” summer recipe. Here is a delicious summer dessert that uses easy to find ingredients and will assure you that your family will be coming back for seconds!

      Easy No Bake Pudding Pie

      For the crust:
      2 cups Oreo baking crumbs
      ½ cup melted butter
      For the filling:
      1 cup 35% whipping cream
      1 pkg. Vanilla instant pudding mix
      1 ½ cups 2% milk
      2 tbsp pure cacao
      Fresh strawberries to decorate

      Mix the Oreo baking crumbs and ½ cup of melted butter together and press into a 9-inch pie dish. For a softer crust use less butter. Set aside.

      In a mixing bowl, whip the 35% cream with a hand blender until stiff peaks form and set aside. In another mixing bowl beat the vanilla pudding mix, the milk and the cacao together. Once it is evenly mixed, gently fold in the whipped cream into the pudding mixture. Once it is evenly mixed pour the mixture into the pie dish. Place in the fridge to set for at least a half hour.

      You may garnish with fresh strawberries.

      A delicious and quick dessert to enjoy!
