      In the Kitchen with SandraHere is a delicious potato side dish combining two classic recipes: the scalloped potato and the loaded potato skins. Minus the skins, this classic scalloped potato has been transformed by adding the simple yet flavor enhancing ingredients from the loaded potato skins. A great side dish for any of your BBQ dishes this summer!

      Loaded Scalloped Potatoes

      5 lbs small to medium potatoes, peeled and sliced thin
      1 small onion, sliced thin
      5 strips of cooked bacon, crumbled
      1 tsp crushed garlic
      500 ml cooking cream
      ¼ cup sour cream
      1 cup marble cheddar, grated
      Salt and pepper to taste
      1 tbsp chopped fresh chives

      Preheat the oven to 350 degrees.

      Prepare a 9 x 13 baking dish by spraying with cooking spray. Set aside.

      Place sliced potatoes in a large bowl. Add the sliced onions and crumbled bacon. Toss together. In a small bowl add cooking cream, crushed garlic, sour cream and salt and pepper. Mix together and add this wet mixture to the potatoes. Finally add the grated marble cheddar.

      Pour the potato mixture into the baking dish and bake for about 30 minutes. Sprinkle with the chopped chives and let stand for about 10 minutes before serving. Enjoy!
