      In the Kitchen with Sandra: Zucchini Fritters

      In the Kitchen with SandraA delightful vegetable side dish for any meal. And just in time to use up the lovely zucchinis from Nonna’s garden! Even more delightful with a slightly spicy dipping sauce to compliment the fritter. Your family will keep coming back for more!

      Zucchini Fritters

      6 small zucchini, grated
      2 large eggs
      1/2 cup flour
      1/4 cup grated parmesan cheese
      1/2 tsp salt
      1/4 tsp black pepper
      4 cups oil for frying
      For the dipping sauce:
      2 tbsp mayonnaise
      2 tbsp sour cream
      1 tbsp chopped green onion
      15 drops Tabasco sauce

      In a large bowl, add the grated zucchini, eggs, flour, grated parmesan cheese, salt and pepper. Mix together. Set aside.

      Prepare a dish lined with paper towels, and set aside.

      In a frying pan, heat the oil over medium heat. Once the oil is hot, drop heaping tablespoons of the zucchini batter in the hot oil. Fry for about 4-5 minutes on each side until golden brown. Place on the dish lined with paper towels to drain the excess oil.

      To prepare the dipping sauce: In a small bowl add the mayonnaise, sour cream, chopped green onion and Tabasco sauce. Mix well together and serve with the fritters. Enjoy!
