In the Kitchen with SandraAlmost everyone loves a freshly baked, homemade chocolate chip cookie. Did you know that the chocolate chips can be substituted with M&M’s, Skor Pieces or mini Rolos? This recipe is quick and easy to make, and it only takes one bowl! A great activity with the kids! The recipe makes about 24 small cookies.

      One Bowl Rolo Chip Cookies

      INGREDIENTS
      ½ cup melted butter
      ½ cup sugar
      ½ cup brown sugar
      1 large egg
      1 tsp vanilla extract
      1 ½ cup sifted A/P Flour
      ½ tsp baking soda
      1 cup mini Rolos*

*can be substituted with M&M’s, Skor Pieces, etc.

Pre-heat the oven to 325 degrees. Line two baking sheets with parchment paper and set aside.

In a large mixing bowl add the melted butter, sugar, brown sugar, egg and vanilla extract. Mix together. Then add the flour and baking soda. Mix well. Finally, add the mini Rolos. Separate the batter into 24 equal balls and place about 2 inches apart on the baking sheets. With the palm of your hand, gently press down on each ball to flatten the dough. Place in the oven and bake for about 5 to 6 minutes.

Keep a watchful eye on these cookies because the Rolos will melt quickly! Let cool for about ten minutes before serving. Enjoy!
